Finding the perfect snack is the key to succeeding on a diet. Okay, not really, but it certainly helps! Whether a person would like to drop some pounds or make it through the day without giving up on a low carb diet, there need to be some healthy alternatives to grabbing a bag of chips. These 5 snacks have something that’ll work for everyone, and they’re a lot healthier than the other snack options out there. In addition to these easy low carb snacks, in the Body Reboot book, we mention many other low carb snacks that taste awesome and help us stick to our weight loss goals!
Zucchini Parmesan Crisps
Damn Delicious offers a recipe on how to make zucchini parmesan crisps. If you’re craving chips, these are a great snack to whip it. Get the crunch factor combined with delicious cheese. When can we make this?!
INGREDIENTS:
1/2 cup vegetable oil
1 cup Panko*
1/2 cup grated Parmesan cheese
2 zucchinis, thinly sliced to 1/4-inch thick rounds
1/2 cup all-purpose flour
2 large eggs, beaten
DIRECTIONS:
Heat vegetable oil in a large skillet over medium high heat.
In a large bowl, combine Panko and Parmesan; set aside.
Working in batches, dredge zucchini rounds in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
Add zucchini rounds to the skillet, 5 or 6 at a time, and cook until evenly golden and crispy, about 1 minute on each side. Transfer to a paper towel-lined plate.
Serve immediately.
Berries and Whipped Cream
Need a quick and tasty snack? Whip up some berries and whipped cream! Berries are delicious, and if you cut the dessert, you’ll find they’re just as satisfying. Diet Doctor agrees that this makes the perfect, healthy dessert.
Berries are decently low-carb sweets. But if you’re on a strict low-carb diet you may need to make it an occasional treat. Blueberries have the most carbs.
Heavy whipping cream – forget low-fat fake cream. Get real heavy whipping cream, ideally at 40 percent fat and definitely unsweetened (the natural sweetness is quite enough once you get used to it). Whip and have it with your berries. Note however that this is absolutely delicious, and it’s easy to eat a lot of it when not hungry, slowing down weight loss. So try to not overdo it.
Dark Chocolate Sea Salt Almonds
Most people like chocolate, and if you don’t, what’s wrong with you? Luckily on the keto diet, a low carb, high fat diet, dark chocolate is definitely okay to eat in moderation. Dark chocolate is what you should stick to eating, and Sally’s Baking Addiction tells us how to make dark chocolate sea salt with almonds. Yummy!
Ingredients:
6 ounces bittersweet or semi-sweet high quality chocolate
1 and 1/2 cups Diamond of California whole almonds (raw and unsalted)
sea salt
turbinado sugar (or any coarse/raw sugar)
Directions:
Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
Melt the chocolate in a double boiler or (carefully!) use the microwave. For the microwave, place the chocolate in a medium heat-proof bowl. Melt in 30 second increments, stirring after each increment until completely melted and smooth. Alternatively, you can temper the chocolate. If tempering, do not store finished nuts in the refrigerator.
Stir the almonds into the chocolate, making sure to coat each one. Using a dipping tool or a fork, lift the almonds out of the chocolate one by one or only a couple at a time (you don't want them all sticking together!), gently tap the tool/fork against the side of the bowl to release excess chocolate, and place onto prepared baking sheet. Repeat with remaining almonds.
Sprinkle almonds with a little sea salt and turbinado sugar, then allow chocolate to completely set. I placed the baking sheet in the refrigerator to speed it up!
Store chocolate covered almonds in the refrigerator for up to 4 weeks.
Recipe Notes:
For extra flavor, try toasting the almonds first! Simply spread them out onto a large baking sheet and bake for 10-12 minutes at 300°F (149°C). Allow to slightly cool before coating with chocolate.
Diet Doctor explains more about consuming dark chocolate and what you should keep in mind:
Chocolate is not low carb. However, you can occasionally get away with one or two thin squares of high-cocoa chocolate (70%+) even on a strict low-carb diet. On a more liberal low-carb diet you could do it regularly.
One small thin square (10 grams or less than half an ounce) of 86 percent chocolate contains about 2 grams of carbs.
Switch to 70% chocolate and you get about 3.5 grams per square.
Regular chocolate can be 6 grams of carbs or more per square – not an option if you want to stay low carb.
Loaded Devel Eggs
Eggs are a staple in the keto diet, and loaded devel eggs are like icing on the cake. Six Sisters’ Stuff gives us a perfect recipe to make these delicious eggs, which, by the way, are perfect for family get-togethers. Enjoy a healthy, keto-friendly snack that your fam will love too!
HOW TO MAKE LOADED DEVILED EGGS:
Once you’ve boiled your eggs, peel them, cut them in half, and remove the yolks.
Place the yolks in a bowl and mash well with a fork.
Add in bacon, chives, vinegar, mustard, cheese, garlic powder, salt and pepper and mix well.
Add the sour cream last. You can add more as needed to reach desired smoothness.
Spoon mixture back into the egg halves. We like to refrigerate them until serving so they are nice and chilled.
They really are that simple. And like I said, you may want to triple the batch – they are very addicting. After one egg you’ll be hooked.
Spinach Balls
If you happen to like spinach, then you should give this recipe a shot from Recipe Girl. Hey, it’s a great way to become Popeye AND your veggies in one foul swoop!
INGREDIENTS:
2 (10 ounce packages) frozen chopped spinach, thawed & squeezed dry
1 cup dried boxed stuffing mix (crumbled)
4 large eggs
3/4 cup grated Parmesan cheese
1/2 teaspoon thyme
1/4 cup melted butter
1 clove garlic, crushed
salt & pepper to taste
DIRECTIONS:
In a medium sized bowl, mix spinach with remaining ingredients. Refrigerate for 20 minutes. Roll into 1-inch balls (you should be able to create about 40). Place onto cookie sheets.
Bake 15 to 20 minutes at 350 degrees. Serve warm.
TIPS:
*These freeze well. Just pop them into the oven while frozen and they should bake up just fine. *I can't help wondering what it would be like to add finely chopped sundried tomato to these spinach balls. Sounds like a good idea to me 🙂

Ingredients
1 English Cucumber cut on an angle
1/2 Kite Hill Cream Cheese Spread (Dairy Free) or cream cheese of your choice
1 package smoked salmon
1/4 small red onion thinly sliced
1 tsp dry dill or 2-3 tbs. freshly chopped dill
Instructions
To have more room on your cucumber base, cut the cucumber on an angle instead of straight across.
Topp each slice of cucumber with about 1/2 – 1 tsp goat milk cream cheese. Top with half of a thin slice of salmon and a few thinly sliced onions
Sprinkle lightly with dill and serve!
