While following a low carb diet, it’s easy to get discouraged. It can sometimes feel like there’s a lot of avoiding foods and cutting back. However, going on the keto diet can be an excellent opportunity to try new meals and food! There are many recipes to try, and many are outlined in the Body Reboot book. Not only are these empanadas low-carb, but they’re also gluten-free. You use almond flour and cheese for the dough and then stuff these with ground beef, a pork sausage alternative (I love chicken!) and eggs for a ton of protein.Carrot Taco Shell
I might have cheated a little bit here, but because this recipe is so easy and so genius, I had to include it! Skip preservative-laden taco shells from the store and make your own carrot version instead! Scoop a heaping spoonful of the sweet and savory mixture into each lettuce cup, sprinkle with peanuts and enjoy the wonderful way tastes contrast textures.
A Succulent Twist on a Classic Chicken Dish
This mouthwatering new take on chicken kebabs is a welcome break from the usual, but just as easy to throw together. The key player: a garlicky, herb-flecked chimichurri sauce that you can also drizzle over vegetables or a side salad. Halved cherry tomatoes cook in even less time, and flaky, white cod needs only about six minutes to brown to perfection. The pièce de résistance: a sauce that you can use to top the fish, which pulls everything together nicely.
A Greek Dinner Where You Won’t Miss the Pita
Although many Greek dishes come wrapped in a split-open pocket, you won’t need any bread to enjoy this shrimp-feta combination. You can leave the tails on and cook the peeled, deveined shrimp over the grill or on a grill pan; or, remove and pan-fry them in a skillet. Whichever technique you use, the shrimp’s lemony-garlicky flavor gets a boost from a finishing sprinkle of crumbled feta and chopped dill.
If you’re not into cooking or don’t have a lot of time to prepare a meal, Ditch the Carbs provides some excellent ideas on some quick meal options. Many of these foods are keto staples, so they can also be incorporated into recipes when you do have more time to cook and bake. The author also mentions some great snack ideas. Eggs, anyone?

These basic low-carb meals are so easy, they don’t even require a recipe.

Bag of salad with meat and cheeseMy favourite would have to be eggs. I love them scrambled with butter and greens, Scotch Eggs, as a 1 minute muffin or poached in my egg maker.
Forget protein powders (highly processed and expensive). If you need protein, reach for an egg. And if you are fed up with eggs, why not try cheese, tinned/canned tuna, or a few nuts instead.
Just remember not to go overboard on low-carb snacks. They can be one of the biggest culprits to stopping weight loss.

Low-Carb Veggies
Quantity counts when it comes to hunger control. Low-carb veggies have a low energy density, which means you get to eat a large portion without it costing too many calories or carbs. People who eat more low-energy-dense foods get full fast and stay satisfied longer, according to the Centers for Disease Control and Prevention.
Alfalfa sprouts, endive, escarole, watercress, lettuce, raw spinach, turnip greens, bok choy and radishes have less than 1 gram of net carbs per 1/2-cup serving size, making them the most filling on your low-carb diet. Other low-carb veggies that keep you feeling full include broccoli, cauliflower, celery, cucumbers, eggplant, portobello mushrooms, bell peppers and tomatoes.
The fiber in these veggies also helps keep hunger pangs away. Fiber adds bulk, so it fills you and takes longer to digest, helping you stay full. A half-cup of cooked broccoli has 2 grams of fiber, cauliflower 3 grams of fiber and turnip greens 6 grams of fiber. Raw spinach has 2 grams of fiber per 1/2 cup.
Here are some more snack and quick meal ideas if you’re running short of time. If you love avocado and other keto staples, then you’re in luck because all of these ideas from Lifehack sound delicious.
Avocado and egg
Crack an egg into the hole left by removing the pit from the avocado. Bake it at 425 in your oven till the egg has the desired consistency.Prosciutto Wrapped Asparagus

Use whatever type of cheese you like.Kale chips
